Lemon Chia Pudding

Inspired by our Citrus Bliss! Fresh, zesty and creamy - this lemon cream pie chia pudding tastes like sunshine in a jar. A bowl you'll want to make on repeat;  healthy, super high in fibre and packed with all the good stuff. It is perfect for breakfast or when in need of a snack. Healthy fats to keep your skin glowing & just the perfect combination to keep you full all day long! I find recipes like this the perfect, guilt-free way to still enjoy the sweet treats we love, without compromising on flavour. 

INGREDIENTS:

• 1 cup cottage cheese or greek yogurt
• 2 tbsp lemon juice, 2 tsp lemon zest
• 1/4 cup coconut milk 
• 1 tbsp sweetener (maple, honey or agave)
• 1 tsp vanilla extract  
• 3 tbsp chia seeds
 

Toppings (optional):
Yogurt of choice 
Crushed cookies or Granola 


METHOD:

• Blend, chill for atleast 3 hours and top with yogurt and your favourite toppings.
• Let the Citrus Bliss begin!
