Elle Gibson's Chocolate Hazelnut Caramel Slices

An edible version of one of Elle's absolute favourite scents - Pick Me Up that smells just like you're cooking a freshly baked treat in the oven.

The base:

11/2 cups roasted hazelnuts blended into flour

1/2 cup oat flour

1/4 cup agave/maple syrup

4 tbsp coconut oil

1 tsp vanilla extract pinch sea salt

The caramel:

1 1/2 cups pitted dates

1 tbsp cashew/hazelnut butter

3-4 tbsp agave/maple syrup

1 tbsp coconut oil pinch salt

Toppings:

80g hazelnut chocolate

Sprinkle of cacao nibs

 

Method:

Mix all the base ingredients together in a bowl until you have a moist but slightly crumbly texture. If it seems too dry, add a splash more liquid.

Press the mixture into your chosen tin or tray

To make the caramel blend all ingredients together to a thick chewy-caramel consistency, spread this on top of the base layer. 

For the toppings melt around 80g hazelnut chocolate and spread evenly across the caramel.

Sprinkle over chopped hazelnuts and a sprinkle of cacao nibs (optional - you can really do whatever toppings you like!)

Let the slices set in the fridge for 30 minutes minimum and then slice and enjoy!
