Lemon Possets

WHY KŌDŌ LOVES

Bright, creamy, and bursting with citrusy joy: These lemon possets are the perfect little treat to match our Citrus Bliss mood. Just a few simple ingredients, but the result is pure sunshine in a cup. 🍋✨

INGREDIENTS:

3–4 lemons
• 1 cup frozen cherries 
200 ml heavy cream (33% fat)
50 g sugar 
4 tbsp freshly squeezed lemon juice
• 1 lemon zest
A dash of vanilla extract


METHOD:

Cut the lemons in half and carefully scoop out the insides. Squeeze out the juice from the pulp and set the juice aside (we’ll need it later for the cream mixture).
In a saucepan, gently mash the sugar together with the lemon zest to release the oils and aroma.
Add the cream and slowly heat over medium heat, stirring gently for about 6–7 minutes (don’t let it boil). 
Remove from heat, add the lemon juice and a small splash of vanilla extract.
Strain the mixture to remove zest and any pulp.
Pour the smooth cream into the empty lemon halves.

Chill in the fridge for at least 3 hours until set.
